WAKE UP THE RIGHT WAY
Our hearty 2 and 3 course breakfasts alternate between sweet and savory and are served somewhere between 8:00 to 9:30 a.m. each morning, based on our guests needs and number of guests. Should anyone in your party have dietary restrictions, please let us know when you book so they may be accommodated. Vegan, vegetarian and gluten free options are always available with prior notice. With a day's prior notice, an early breakfast can also be served for those wishing to get to activities or flights early, or a breakfast to-go can be prepared the night before. Breakfast –in- bed is also available – just ask us! Please let us know the day before if you are not going to be with us for breakfast the next day. Our sit-down breakfast alternates between Sweet and Savory with Bacon or Smoked Sausage served as a side. Our Savory Breakfasts start with a seasonal fruit, followed by a homemade bread or pastry, and a hot main course. In the winter months hot Oatmeal, Blue Corn Atoli or Quinoa topped with fruit and nuts is often served. Our Sweet Breakfasts also follow the seasons, starting with a generous serving of a seasonal fruit followed by a Pancake, Waffle or French Toast.

Eggs Benedict
Start your day with broiled bananas on a berry coulis topped with sliced toasted almonds followed by a half or full order of Eggs Benedict – a toasted English muffin with a slice of Canadian bacon and soft poached egg topped with a New Mexican spiced Hollandaise Sauce.
Roasted Veggie Omelets
Warm your morning with a bowl of Blue Corn Atoli sprinkled with brown sugar, pecans, blueberries and cranberries followed by a Veggie Omelet filled with roasted slices of sweet potatoes and zucchini, mushrooms, onions and garlic sautéed in olive oil, fresh spinach and a light sprinkling of cheese with a side of grilled smoked beef-pork sausage.
Migas
Enjoy a little southwest flavor with chilled watermelon and lime, spicy homemade cornbread with green chili-pecan butter, and Migas with a side of black beans ~ an egg dish that combines crispy corn tortillas with sauteed veggies, cheese and chopped tomatoes.
Almond Encrusted French Toast
Prepare for that scenic hike in the Gorge with a generous helping of seasonal fruit – Organic yogurt with honey, cinnamon, fresh berries and spearmint and a crispy serving of almond encrusted french toast served with a warm fruit compote and a side of crispy bacon. .
Belgian Waffles
Our homemade Belgian Waffles with warmed berries, maple syrup and a side of bacon will satisfy those with a slight sweet tooth. Of course, a healthy seasonal fruit is served first!
Mediterranean Frittata
During harvest, we grill slices of our own apples and top with cinnamon, brown sugar and toasted almonds followed with light homemade cinnamon rolls and a frittata layered with roasted sweet potatoes, roasted mushrooms with onions and garlic, layers of feta and cotija cheese and fresh spinach or kale from our garden.
